What is High Fructose Corn Syrups?

High-fructose corn syrup (HFCS) is a fructose-glucose liquid sweetener alternative to sucrose (common table sugar) used in many foods and beverages. A range of formulas of HFCS with varying ratios of fructose to glucose are used in various food applications. HFCS is a natural corn syrup which is produced by the isomerisation of glucose to fructose by the enzymatic process to yield HFCS products classified according to their fructose content: HFCS-42,HFCS-55, HFCS-90.

Per relative sweetness, HFCS 55 is comparable to table sugar (sucrose), a disaccharide of fructose and glucose

High-fructose corn syrup HFCS 90 is sweeter than sucrose; HFCS 42 is less sweet than sucrose.
