What is Sorbic acid?
Sorbic acid is a natural organic compound used as a food preservative. It has the chemical formula CH3(CH)4CO2H and the structure H3C−CH=CH−CH=CH−C(=O)OH. It is a colorless solid that is slightly soluble in water and sublimes readily. Sorbic acid is highly effective at inhibiting the growth of mold, yeast, and fungi. Potassium Sorbate Granular Applications
Potassium sorbate has a wide variety of uses. This mild preservative has been valued for decades for its antimicrobial properties, and is an especially effective food preservative found in dehydrated meats, dairy products, and pastries. It’s especially common in dried fruit and is also often used to help preserve wine.
Potassium sorbate is used to inhibit molds and yeasts in many foods, such as cheese, wine, yogurt, dried meats, apple cider, soft drinks and fruit drinks, and baked goods. It can also be found in the ingredients list of many dried fruit products. In addition, herbal dietary supplement products generally contain potassium sorbate, which acts to prevent mold and microbes and to increase shelf life, and is used in quantities at which there are no known adverse health effects, over short periods of time.
